A more accurate term might be “nutrient-dense,” which refers to foods that contain a significant amount of vitamins, minerals, and other healthful substances with respect to their calories, and are not “diluted” by added sugars, solid fats, and refined starches.
Our goal was to build recipes that utilized the most nutrient-dense foods that are widely available and easily incorporated into everyday cooking. We weren’t going to get there by relying on blueberries alone. We needed a full basket of ingredients that could constitute a new lineup of staples. Fortunately, many of the most nutrient-dense foods can be found right in your own backyard (or local market). With guidance from a registered dietitian, we compiled a list of 50 high-nutrient superfoods across fruits, vegetables, legumes, grains, and proteins, selecting foods based on what we knew could get plenty of use in the kitchen and constitute a significant part of a meal. We also assembled a pantry of nutritious seasonings, flours, and fats. Every item listed is super in its own way and deserves a place in your grocery cart and on your plate.
